Ingredients:
-1 lb ground chicken or turkey
-Taco Seasoning (salt, garlic powder, cumin, paprika, chili powder, dash of cayenne pepper)
-Red Onion
-Spinach (1 cup chopped)
-Tomato
-Shredded cheese (cheddar/mozzarella)
-1 Spaghetti Squash
Cook the ground the chicken, drain the fat, add a little water and season with the taco seasoning. While that is cooking, chop up your tomato, spinach and onion.
In meantime cook the spaghetti squash (slice in half, season with salt/pepper) and place skin side up on a cookie sheet on 375 for 30 minutes and once that is done scoop out the spaghetti and mix it in a bowl with the rest of the ingredients. I added the cheese on top and baked in the oven until it was melted
