I'm not sure about any of you, but I have a small obsession with buffalo chicken...anything!
I wanted to try something different tonight and what I came up with was so easy and oh so GOOD! Please not that I am terrible at measuring things...but these are the ingredients I used:
Buffalo Chicken Stuffed Spaghetti Squash |
-1 Spaghetti Squash (cut in half, guts scooped out)
-Chopped tomato
-Chopped red onion
-Shredded Mozzarella Cheese
-Shredded Cheddar Cheese
I seasoned the spaghetti squash, placed on a cookie sheet, skin side up and cooked for 30 mins on 375. In the meantime, I cooked the ground chicken on the stove top and added in the buffalo sauce. While that was cooking I chopped up the tomato and onion and put aside in a bowl with the cheese. Once the ground chicken was done, I added that to the bowl with the tomato,onion and cheese. By this time, the spaghetti squash was done and i scooped out the "meat" and added it to the bowl with everything else and mixed it up really well. Then I filled the spaghetti squash with the mixture and popped it back in the over for 10-15 mins. 5 minutes before I took it out I added a little more cheese on top...
